Easter Tradition
Each year, part of our family Easter tradition is sharing communion bread and washing each other's feet. This has been a great time for our family to love and serve each other in this way. I am personally very thankful for the inlaw children God has blessed our family with, and how they, too, share in this experience. Our little ones also delight in joining us. So after dinner and enjoying watching the children find the hidden eggs, we go to the 'upper room'. This is a room that my husband, Harry and I have previously prepared for this celebration. We read in the Bible where Jesus shared the last supper with his disciples and washed their feet . Then we do the same.
I'd like to share my receipe for communion bread. It's an old receipe I got from a lady at my church many years ago. I always make extra and send a bag home with each family. I hope your family can enjoy this as we do.
Communion Bread
4 cups flour
1/4 tsp salt
1 1/2 tsp sugar
3/4 cup whipped unsalted butter (room temp)
mix above with hands - as you would pie dough
gradually add 1 cup warm cream (half & half)
knead well
divide into balls (probably 3 or 4)
work each ball well with hands until all bubbles are out and dough is very soft
roll each ball out on a cookie sheet until 1/8 - 1/4" thick
mark as you would like it divided (I use a pizza cutter to cut in 1" strips - do not cut all the way through to the pan - just mark it. Then mark across to make 1" square pieces. Then take a fork - I use a 3-prong fork to make holes so the dough does not bubble up when baking. I also like to think of the 3 holes as representing the Father, Son, & Holy Spirit in our lives.)
Bake at 350 for 20 minutes. It should be lightly brown on bottom. It can look slightly doughy, but not too much. Don't overbake.
Cool, cut or break apart - store in air-tight container. You can freeze it for a while if you want to. We like it best when it's fresh. I usually make it one day ahead.
Pancake Syrup
Have you ever gotten up on a Saturday or Sunday morning to make pancakes for your family and found you were out of syrup?!! Well, here is a solution - make your own.
You'll need to keep some maple flavoring on hand - found where you purchase vanilla. Now, the recipe:
1 3/4 cups white sugar
1/4 cup brown sugar (I use dark brown)
1 cup water
Bring to a boil, turn down to a steady boil, then cover and boil 1 minute
Remove from heat - allow to cool slightly (keep lid on to keep from getting film on top)
Add 1/2 tsp vanilla
Add 1/2 tsp maple flavor
I also add some Karo syrup to make desired consistancy (1/4 - 1/2 cup)
Put into an empty pancake bottle and serve! They'll never know the difference!

At 5:00 am on Sunday Jan. 11 the temp outside was around 7 degrees unfortunatley at 6:00 am ,when we all got on the bus to travel to Lewistown, Pa for a concert, inside the bus was a chilly 37 degrees. The heat pump on the bus didn't seem to be able to keep up with the cold outside. It got to be funny after we had traveled for an hour and we could still see our breathe when we talked. We were at a whopping 41 degrees when we got to the church.
After a fun concert at The Lewistown Bethel AME church, the kids went out to change and actually said it was to warm on the bus.
On the trip home we where having a good laugh about the first trip we took in the old motorhome. Before we had traveled 5 miles the whole piece around the back window fell off and later down the road the refrigerater door fell off and rolled back the hall.
Just another normal weekend with the Family.
A new form of transportation
Well after a long, long , process we have some final results on transportation. The Camper was totalled and after some very tiring weekends, in three vehicles, we have realized that a bus would be the best mode of transportation, for a variety of reasons. We have found and purchased a bus from a gentleman in GA. It will be a blessing for the kids to all have a space to call there own.
As you would imagine, the bus was not cheap, but we continue to try to be the best stewards of the donations that are sent to the ministry. We have ,for the majority of 10 years, functioned as a debt free ministry. We would appreciate any donations toward paying off the bus as we strive to quickly be a debt free ministry again. All donations are tax deductible due to our status as a non-profit ministry.

Mom
Bulletin Board from The Little White Church in Conklin, NY
This gave us quite a laugh and we wanted you to be able to read it!
In the beginning, God created the Heavens and the Earth and populated the Earth with broccoli, cauliflower and spinach, green ,yellow and red vegetables of all kinds, so Man and Woman would live long and healthy lives.
Then using God's great gifts, Satan created Ben And Jerry's Ice Cream and krispy Creme Donuts, And Satan said, "you want chocolate with that?"And Man said,"Yes!"and woman said,"and as long as you're at it ,add sprinkles." And they gained 10 pounds. And Satan smiled.
And God created the healthful yogurt, that woman might keep the figure that man found so fair. And Satan brought forth white flour from the wheat and Sugar from the cane and combine them. And Woman went from size 6 to size 14.
So God said," Try my fresh green salad." And satan presented Thousand Island dressing, buttery croutons and garlic toast on the side. And Man and Woman unfastened their belts following the repast.
God then said," I have sent you heart healthy vegatables and olive oil in which to cook them." And Satan brought forth deep fried fish and Chicken fried steak so big it needs it's own platter. And Man gained more weight and his cholesterol went through the roof. God then created a light, fluffy cake , and named it "Angel Food Cake," and said,"it is good." And satan then created chocolate cake and named it "Devil's Food."
God then brought forth running shoes so that his children might lose those extra pounds. And Satan gave cable TV with a remote control so man would not have to toil changing channels. And Man and Woman laughed and cried before the flickering blue light and gained pounds.
Then God brought forth the potato, naturally low in fat and brimming with nutrition. And Satan peeled off the healthful skin and sliced the starchy center into chips and deep fried them. And Man gained pounds.
God then gave man lean beef so that Man might consume fewer calories and still satisfy his appetite. And Satan created McDonald's and it's 99-cent double cheeseburger. Then said, "you want fries with that?"And man replied, "Yes! and super size them!" And Satan said, " It is good, "And Man went into cardiac arrest.
God sighed and created quadruple bypass surgery.
Then Satan created HMO's.
Bus Breaks Down!
- view from where we broke down,
- Not Again!!!
- Along the road
- hooking up for the tow
- Pastor chad and Pastor Fred helping get the trailer to the next exit.
Do you remember the show Hee Haw? Grandpa Jones and the guys would sing the song" Gloom, despair and agony on me, deep dark depression is hanging over me, if I had no bad luck I'd have no luck at all" well I'm thinking that the family may soon have to adopt that as a theme song. Do you believe that 3 weeks after we had a fire in our RV ,we broke down in the bus that we were borrowing.
This weekend we traveled to DE then on to NH and CT and then back to PA. The weekend was going well. We had the privilegeto sing at Sam Yoder's farm in Houston, DE. Sam and Anna do a wonderful job of putting on concerts there and if you are interested in tractors, like Garrett is, you will love the atmosphere. We enjoyed greatly being back in Milford, NH and then seeing Pastor Earl again in Windsor Locks, CT.
As we made our way back to PA ,we were about 2 1/2 hours from home when,AGAIN, we were on a PA mountain and Scott said " I have bad news" .The bus was losing power and he could see black smoke coming from the back of the bus. He got off the road and we all got out. After checking out the situation it became clear quickly that this was not a fixable problem. Antifreeze was running out all over the ground. We were stopped along interstate 81 near Wilkes-Barre, PA. We called Pastor Chad from the Wilkes-Barre Assembly of God Church. We sang twice at his church and we know they are wonderful people. Long story short, we called a tow truck, Pastor Chad and Pastor Fred came to the rescue from the church and took us to the next exit and waited with us until our poor family had to come retrieve us again to take us home.
The funniest part of the break down was, while we were waiting on the tow truck and a ride, a truck hauling a trailer pulled off ahead of where we were broken down. There was no one stopping to see if we were ok along the highway. We were toward the top of the mountain and in some minor construction area with guard rails, so there really wasn't a good place for vehicles to get off the road, but this truck pulled off and we thought ,wow!, here comes a friendly person to help. To our surprise he jumped over the guard rail , walked into the brush to relieve himself and then jumped back into his truck and left. If nothing else we had a good laugh while we waited.
There are a few pictures while we waited. Unfortunately we didn't get a picture of our unexpected entertainment.
